The Concept

NOMU Kichijoji is a two-floor, 26-seat café built around NOMU ENTERPRISE’s own beverage platform. Customers choose from a large menu of machine-produced drinks rather than relying on a fixed list assembled entirely by a barista. The NOMU POD meters and dispenses base liquids; staff then finish the drinks, preserving a human service step while moving the repetitive dosing work into the machine. Local reporting on the operating café says the system supports more than 200 drink options and over one million potential custom combinations.

The machine is paired with TASO Reuse System cups. That matters because the reusable vessel is not an optional branded tumbler that customers must buy and remember. It is part of the café’s service infrastructure, connecting automated dispensing with a return-and-reuse loop intended to reduce dependence on single-use cups.

Kichijoji also has seven location-specific drinks, including NOMU Blue, a passion fruit, banana, mango and spirulina smoothie; a strawberry-yogurt collagen smoothie; Eden Water with fruit, cucumber and vitamin C; and a protein-foam latte based on machine-extracted espresso. The food offer includes falafel and chicken-salad focaccia sandwiches, salads and other light dishes. These conventional café products broaden the visit, but they are not the innovation.

The operational sequence is the point: the guest chooses a drink, the proprietary equipment produces a precisely measured base, staff add the finishing elements, and the drink is served through a reusable-cup system. That combination lets a small café offer extensive variation without asking staff to measure every component from scratch. The venue operates from 10:30 to 19:00 at 2-16-1 Kichijoji Honcho, six minutes on foot from Kichijoji Station.

What Is Actually New

NOMU’s strongest idea is not that it sells colourful smoothies. It reorganises three ordinary café tasks—choice, dosing and packaging—into one linked system. A conventional drinks counter typically balances customisation against speed and consistency: every additional syrup, supplement or strength option increases training and assembly work. Here, the machine handles the measured base while staff retain the finishing step. The customer can receive substantial variation without every recipe being manually reconstructed.

The second innovation is structural rather than cosmetic. Reusable cups are embedded in the same beverage platform instead of treated as a discount for customers who carry their own mug. By connecting the drinking vessel to TASO Reuse System, NOMU makes reuse part of the default service logic. Remove that loop and the business loses a core operational distinction; remove the dispensing platform and the scale of personalisation becomes much harder to deliver. Neither automated beverage dispensers nor cup-return schemes are new independently, and NOMU’s “world first” language is based on its own October 2025 research. An operator elsewhere could learn from that architecture without copying the branding or the menu wording. The unresolved question is throughput and return behaviour: published materials describe the system and its range, but do not provide audited data on service time, cup-return rates, waste avoided or labour productivity.

Why People Want This

The appeal begins with control. Instead of deciding between a handful of fixed drinks, guests can adjust a beverage to their current taste or purpose and still receive a repeatable recipe. The large choice set also creates discovery: a customer can return for a different combination without needing the café to print an entirely new seasonal menu.

The machine adds legibility. Guests can see that the drink starts from a dedicated production system and is then finished by staff, making the service sequence easy to understand and retell. It is more concrete than an invisible back-office efficiency claim: “the café’s machine builds my base, then the team finishes it.”

The reusable cup supplies a second reason to participate. Customers do not need to own, wash and remember a personal tumbler to avoid a disposable cup. The service makes reuse available as part of the transaction. That lowers a common convenience barrier, although the environmental value ultimately depends on actual return rates and repeated circulation.

Kichijoji’s seating and food matter because they prevent the technology from reducing the visit to a vending transaction. Guests can take the personalised drink upstairs, eat a sandwich or salad, and use the café normally. The concept therefore offers autonomy without removing hospitality: machinery expands the drink system, while people and place still complete the experience.

NOMU Kichijoji clears the innovation gate because its difference survives without futuristic language or colourful styling. The café uses a proprietary machine to scale drink variation, keeps staff in the finishing step, and connects the result to a reusable-cup loop. That is a transferable operating system, not merely a new flavour. The weak point is evidence of impact: the company publishes option counts and describes reuse, but not verified throughput, return or waste data. The concept is worth watching for whether the combined system performs under everyday café conditions.
