The signal: A guest can now be hosted at a sake bar by a person located elsewhere because OrySNACK gives remote workers live control of an OriHime avatar robot behind the counter.
The Concept
OrySNACK is a four-seat, reservation-only bar built inside OryLab’s existing Avatar Robot Cafe DAWN ver.β in Nihombashi. Its service is sold as a 70-minute package rather than as a conventional open-ended bar visit. Sixty minutes are reserved for interaction with an OriHime “pilot”: a person located elsewhere in Japan or abroad who operates the tabletop avatar robot live and speaks with guests across the counter.
The drinks provide a structure for that conversation. The package includes a sequential tasting of four Japanese sakes, with the pilot introducing the brewery, region and story behind each selection. Three snacks are included, and non-alcoholic alternatives are available. Additional drinks and snacks can be purchased separately. Guests choose either a Japanese-language or English-language course when reserving.
The room is deliberately small. OrySNACK accepts one to four guests per session, with only three groups per operating day; guests may share the counter. The limited capacity turns remote service into a hosted social encounter rather than a quick novelty interaction. The official booking page currently lists a 17:30 session and accepts reservations up to 30 days ahead.
The operating model builds on DAWN’s established employment system. OryLab recruits people who have difficulty leaving home because of disability, illness, care responsibilities or other mobility constraints as remote pilots. They control OriHime robots to communicate and work in the physical venue. At OrySNACK, that infrastructure is narrowed to a bar format in which conversation is the principal service. The robot is therefore not a replacement bartender performing autonomous tasks; it is the embodied channel through which a specific human host can hold the floor, guide a tasting and connect strangers at the counter.

What Is Actually New
Remote-controlled service robots already exist at DAWN, so the hardware itself is not the new idea. OrySNACK changes what that system sells. The original café uses avatar robots for ordering, table service and conversation. The new bar packages one pilot’s sustained attention as the core paid product: 60 minutes of hosted dialogue, organised around a four-sake tasting, for no more than four guests.
That distinction matters operationally. Removing the remote pilot would collapse the offer into an ordinary sake flight with snacks; the human relationship is not decoration around the meal. The bar’s capacity, timed booking, language choice and fixed tasting sequence are all arranged to give a remotely located worker enough space to lead the encounter. This is a service-design innovation as much as an accessibility story.
The model also reverses the usual automation narrative. Instead of using robots to remove labour, OryLab uses a physical interface to bring people into hospitality work when commuting or standing behind a conventional counter is difficult or impossible. A guest can see, hear and respond to the individual behind the machine in real time.
Other operators could learn from the mechanism without copying the robot’s appearance: define a hospitality role around dialogue, create a remotely operable physical presence, limit capacity so attention remains meaningful, and bundle food or drink into a paced social format. The transferability is strongest for bars, tastings, visitor centres and cultural venues where explanation and human connection carry as much value as transaction speed.

Why People Want This
Guests are buying access to a person, not a machine. The OriHime body makes that remote person visible in the room, while live voice and gesture create the back-and-forth of a hosted bar rather than a video call placed beside a drink. That contrast is easy to understand and retell: the bartender was somewhere else, yet remained physically present at the counter through an avatar.
The sake flight also gives strangers a shared sequence. Four pours and their regional stories create natural prompts, reducing the pressure to manufacture conversation from nothing. With no more than four seats, the pilot can address individuals, connect guests and adjust the discussion rather than broadcast a generic script. English and Japanese options widen who can participate without changing the service logic.
There is also a meaningful social dimension that is visible during the visit. Guests directly encounter a model that expands hospitality work for people whose health, disability, caregiving duties or location can restrict access to on-site employment. That impact is not hidden in a supply-chain claim or donation programme; it is the mechanism producing the experience.
The trade-off is capacity and price. A one-hour human-led session for only four people cannot behave like a high-throughput bar. But scarcity here is functional, not merely exclusive: sustained conversation requires time and a small group. For guests drawn to hosted tastings, unusual social formats and technology that connects rather than replaces people, the constraint is part of the value.

WBC Verdict
OrySNACK passes the innovation gate because the avatar is not a decorative robot and the sake flight is not the headline. The paid service depends on a remotely located person using a physical proxy to host four guests for an hour. Remove that mechanism and the concept becomes an ordinary tasting bar. Its weakness is scalability: three sessions a day and four seats create limited throughput, while the existing DAWN infrastructure is difficult to reproduce cheaply. Still, it offers a clear lesson for hospitality: remote work can expand human presence in a venue rather than reducing it.
